Tommy is a natural chef that grew up learning his art from his Father and Grammy. He attended Johnson and Wales culinary school in Charlotte North Carolina where he fine-tuned his skill set from 2007-2009
He describes his cooking style as “comfort with a twist” making plant-based dishes that meet dietary requirements in a familiar and approachable presentation. He has stated that he “enjoys the challenge” making his traditional fare that is gluten and dairy-free with great success.
In his own recovery, he studies general nutrition and ayurvedic practices which he applies to every meal served. His goal is to express his joy, gratitude, and wisdom through these dishes that are both nutrient-rich and mentally satisfying.
